I've never made bolognese from scratch before, it's always been the quick way with a glass of dolmio and some meat heated up in like 15-20 minutes.
Bits while back I saw Buddy Valestro (from cake boss on TLC) make a bolognese on his "sister" program kitchen boss which looked amazing, the trick was to let it simmer for hours at low heat
Contents:
a stalk of celery
Half a red bell pepper
Half a yellow bell pepper
Two spring onion
All of the above was minced/chopped
4 sliced mushrooms
2 cans of chopped tomatoes (I bought with basil)
Tomato can filled with water 1,5 times (for easy measurement)
400 grams of ground beef
1 veggie stock cube
Half a beef stock cube
A teaspoon of chili powder
A handful of black beans
A handful of pinto beans
Fry off the veggies and the add the beef and let it cook through,don't brown the beef.
Now add the tomatoes, water and stock cubes (possibly dissolve the cubes in the water first.
Reduce heat (I set it to 3, the Max is 6) and let it simmer for about an hour under lid, after the first hour put in the beans and lower the heat again (set to 2 of 6) and let it simmer for another hour to hour and a half
If you aren't on a diet, or your diet allows pasta, some fresh fettuccini would most likely be great with this, or perhaps some spaghetti
But I served it in heart lettuce leafs as a kind of taco shell
